Tiny House, Big Eats

 


    One of the questions I get asked the most about my healing journey is what has helped the most and I can easily say it's what I eat and what I've stopped eating even more so. Having an autoimmune disorder can be directly linked back to your gut. There are many studies now showing leaky gut syndrome as a common factor in all autoimmune disorders. For anyone, but especially someone with a compromised immune system, it's incredibly important to think about everything you are putting in or on your body.

    Western medicine is not taught to consider diet and nutrition as apart of treatment. In fact America stands alone in our disgusting eating habits. Most of what a "typical" American eats is banned in other countries! Think about this, every time you eat you are either feeding or fighting disease...

    That little quote changed my way of thinking. After my last hospital stay I was determined to heal, to feel better, I knew God did not intend for me to live everyday sick to my stomach. It's taken much research and help from others to figure out where to start. Meal planning and grocery shopping are still one of my downfalls so I thought by sharing what I have learned might help you.

    Let me start by saying living in a 27 foot camper, my kitchen, more than, likely does not resemble yours! I cook outside far more than inside and the fridge/ freezer is the hardest level of Tetras you will ever play. For this meal prep I mainly used my crock pot. To give you a little idea of my Kitchen-on-Wheels, I also use a griddle, toaster oven, and George Foreman to get the job done!

    We follow strict restrictions when it comes to food so if you don't have the same restrictions feel free to tweak the recipes. We buy local or organic produce, grass- fed, antibiotic- free meats, and are also dairy and gluten free.

    Side note: My husband always stresses about the cost of eating organic so I'm on a mission to reduce cost and get more meals out of each meal prep. For this time we went to Fresh Market and spent $70. (On Tuesday's chicken and beef are on sale, we stock up.) Then finished off at Publix spending $30. This meal prep lasted us a week! Total crunchy wife win!!
